About this herb
Dried Lemon Peel.
Lemon Peel is the cut and dried outer shell of the lemon fruit. Although the peel contains a high concentration of oils responsible for the strong lemon flavor, the light-colored pith portion of the peel makes it too bitter to eat fresh. The dried peel, however, can be used in cooking, baking, and tea blends. Lemon peel stimulates the appetite encouraging the release of gastric juices, aiding in digestion, it also providing its fair share of vitamin C.
The lemon Peel can be enjoyed alone as tea or herb or added to just about all herbal teas and herbal formulas, enhancing their aroma and taste. Many people eat the lemon peel or use it in pickling spice mixtures, teas, baked goods, and chutney, imparting its soothing citrusy aroma.
